Caramelised pineapple & banana with ice cream Recipe

  • 1 banana
  • 1 tin pineapple slices in fruit juice
  • 50ml of the preserving juice
  • 1 tablespoon brown sugar
  • 2 tablespooons rum (optional)

Directions

  1. CARAMELISE - Put the sugar into a frying pan and heat gently until it dissolves. Add the pineapple slices. Peel the banana and split into quarters lengthways. Add to the pan. Caramelise the fruit with the sugar. This should take about 3-4 minutes.
  2. BUBBLE - Pour the preserving juice over the fruit and let it bubble until it has thickened and reduced by half. Pour in the rum, if using, and let it evaporate.
  3. SERVE - Transfer the fruit to serving bowls, pour the juice over and serve with vanilla ice cream.
