Caramel Puddings With Two Sauces

Ingredients

  • 125 gm butter
  • 1 1/3 c. brown sugar
  • 6 x egg yolk
  • 2 x egg white
  • 1/2 c. self-raising flour
  • 1/2 c. lowfat milk For the caramel sauce
  • 1/2 c. brown sugar
  • 2 Tbsp. water
  • 60 gm butter
  • 1/3 c. cream For the chocolate sauce
  • 4 ounce dark chocolate
  • 2 ounce water
  • 2 ounce butter

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Beat the butter and the sugar together in a bowl till pale and creamy. Add in the egg yolks and beat well. Stir the flour in and add in the lowfat milk.
  3. Beat the egg whites till soft peaks form. Fold the egg whites into the butter and egg mix and fill six 1-c. capacity ramekins with the mix. Place the ramekins in a baking tray and fill with sufficient water to come halfway up their sides. Bake for 20 min or possibly till puffed and golden brown.
  4. Serve the puddings in their ramekins with both sauces poured over the top.
  5. For the caramel sauce:To make the caramel sauce, stir together the sugar, water and butter over a low heat till the sugar has melted. Add in the cream and allow the sauce to simmer till it has thickened, about 5 min.
  6. For the chocolate sauce:For the chocolate sauce, heat the chocolate with the water over a bain marie. Once the chocolate has melted, remove the bowl from the heating water and stir in the butter, whisking till it has all melted.
