Ingredients

  • 2 c. All-purpose, (plain) flour
  • 3/4 c. Confectioners', (icing) sugar
  • 1 x Egg
  • 1 c. Unsalted butter
  • 1 tsp Vanilla extract
  • 1 tsp Salt
  • 1/3 c. Raspberry jam

Directions

  1. Preheat the oven to 350 F/175 C/gas mark 4.
  2. In a food processor, place the four, sugar, and egg. Turn the machine on and slowly add in the butter, 2 Tbsp./30 g/1 oz at a time.
  3. Add in the vanilla and salt. Process till the dough forms a ball on top of the blades.
  4. With the palms of your hands, roll the dough into balls about 2 inches/5 cm diameter. Place the balls on a greased baking sheet.
  5. Press the balls down slightly with the bottom of a glass or possibly jar to a thickness of 1/4 inch/0.5 cm. Press your thumb into the middle of each circle to create a well, with out pressing all the way through the dough.
  6. Fill each well with about 1/2 tsp. of the jam. Bake till the cookies are golden, about 10 to 12 min.
  7. Serve alone or possibly with ice cream.
  8. Makes one dozen cookies
