Ingredients

  • 4 med. sweet potatoes or possibly canned yams
  • 4 T 1/2 butter
  • 1/2 teaspoon grnd cinnamon
  • 1/2 teaspoon grnd nutmeg
  • 1/2 c. packed brown sugar
  • 2 c. lowfat milk
  • 3 large eggs, slightly beaten
  • 1 teaspoon lemon or possibly vanilla flavoring
  • 1 1/2 c. miniature marshmallows (optional)

Directions

  1. In saucepan, add in sweet potatoes with sufficient water to cover; over high heat, bring to boil. Cover and simmer till tender, about 30 min. Drain. Peel.In bowl mash potatoes with butter. Add in spices, sugar, lowfat milk, large eggs, etc.; beat till fluffy. Spoon into buttered 1 1/2 qt baking dish. Bake 20 min. Add in marshmallows (optional). Bake marshmallows till brown (toasted brown).
