Cambodian Table Sauce

This sauce is found on most tables in Cambodian homes. It is used to garnish many grilled seafood and beef dishes.

Ingredients

  • 2 cloves garlic, peeled
  • 2 fresh red chilies of your own heat choice, stemmed and seeded
  • 1/2 cup water
  • 2tbsp fish sauce,found in most markets today
  • juice of 1 fresh lime
  • 3 tbsp sugar

Directions

  1. Combine garlic, chilies and water and liquefy in a blender or food processor.
  2. Mix together with fish sauce, lime juice and sugar. Stir to dissolve the sugar.
  3. Bottle and refrigerate,
  4. Double recipe if desired.
