  • 1 lrg oven bag
  • 1 Tbsp. all-purpose flour
  • 1 can pineapple chunks in juice - (15 ounce) undrained
  • 1 pkt black bean-rice mix - (8 ounce)
  • 1 can condensed chicken broth - (10 1/2 ounce)
  • 1/2 c. water
  • 1 Tbsp. minced fresh cilantro
  • 4 x skinned bone-in chicken breasts

Directions

  1. Preheat oven to 350 degrees.
  2. Place oven bag in a 13- by 9-inch baking dish. Add in flour; twist end of oven bag, and shake.
  3. Add in pineapple and next 4 ingredients to oven bag; squeeze bag to blend ingredients. Arrange chicken in an even layer over rice mix.
  4. Close oven bag with nylon tie; cut 6 (1/2-inch) slits in top of bag. Bake at 350 degrees for 45 to 50 min.
  5. This recipe yields 4 servings.
