Last month the good folks at Cake Boss put out the word that they were looking for recipes to feature their products for a marketing campaign. It was going to be called #SummerSundae. Gee, great baking equipment, good people to work with, and the requirement to include ice cream? Oh yeah, they had me at Hello.

So I started thinking about things I could make with ice cream, wanting to create a dessert that could be customized easily, making it perfect for any occasion. Something fun and festive. And of course it needs to be gluten-free. Hmmm, what would I make?
