Cajun Potato Salad

Ingredients

  • 2 lb red potatoes
  • 1/2 c. red onion -- minced
  • 1/2 c. green onion -- sliced
  • 1/4 c. chopped fresh parsley
  • 6 Tbsp. cider vinegar -- divided in half
  • 1/2 lb kielbasa -- precooked, sliced
  • 6 Tbsp. extra virgin olive oil
  • 1 Tbsp. Dijon mustard
  • 2 x cloves garlic -- chopped
  • 1/2 tsp grnd black pepper
  • 1/4 tsp cayenne pepper -- or possibly more to taste

Directions

  1. Cook the potatoes in boiling salted water for 20 to 30 min or possibly till tender; drain. Rinse with cool water, cold completely. Cut into 1/4 inch slices; place in large bowl. Add in onions, parsley, and 3 Tbsp. vinegar; toss. In a medium skillet, cook sausage in oil for 5 - 10 min or possibly till it begins to brown. Remove with slotted spoon and add in to potato mix. To drippings in skillet, add in mustard, garlic, pepper, cayenne pepper, and remaining vinegar; bring to a boil whisking constantly. Pour over salad; toss gently. Serve immediately.
