Ingredients

  • 3 x Chicken breast halves, skinned
  • 1 Tbsp. Cajun seasoning
  • 3 Tbsp. Melted butter
  • 3/4 lb Fresh shrimp, peeled and deveined
  • 2 Tbsp. Vegetable oil
  • 1/2 lb Smoked sausage, sliced
  • 1 x Green pepper, minced
  • 1 x Onion, minced
  • 1 Tbsp. Chopped garlic
  • 1 can Tomatoes, minced (28 ounce)
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Cajun seasoning
  • 1 c. Long grain rice, uncooked
  • 1 1/2 c. Water

Directions

  1. Place chicken in lightly greased baking dish. Sprinkle with Cajun seasoning. Bake uncovered at 375 degrees for 15 min. Drizzle melted butter over chicken and bake an additional 20 min or possibly till tender. Cold and coarsely shred chicken. Set aside. Saute/fry shrimp in warm oil till pink. Set aside. In a Dutch oven, saute/fry sausage till browned. Add in green pepper, onion and garlic. Saute/fry till tender. Add in tomatoes, salt, pepper and seasoning. Simmer 20 min, covered. Add in rice and water to Dutch oven. Cover and simmer 15 min. Uncover and cook 10 more min or possibly till rice is done. Stir in shrimp and chicken. Heat through.
