I have left the amount of kielbasa and shrimp out because everyone is different on how much they like. This is up to you.

  • 2 tbsp. all purpose flour
  • 1 tbsp. vegetable oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 4 garlic cloves, minced
  • 1/4 cup water
  • 3/4 tsp. hot sauce
  • 1 (14.5 oz) can stewed tomatoes
  • 1 (10.5 oz) can chicken broth
  • 2 bay leaves
  • Kielbasa, cut into slices
  • Med. shrimp, peeled and deveined
  • 1 (10oz) pkg. frozen okra, thawed
  • 1 tbsp. file powder
  • 3 cups cooked rice

Directions

  1. Place flour in saucepan. With a whisk and whisking continually brown flour over medium heat. If browns too quickly remove from heat. Set aside in bowl.
  2. Heat oil in saucepan over medium heat. Add onion, celery, bell pepper and garlic. Saute until tender. Sprinkle with browned flour, cook 1 minute. Stir constant.
  3. Stir in water, hot sauce, stewed tomatoes, chicken broth and bay leaves. Bring to a boil. Reduce heat, simmer, uncovered 10 minutes.
  4. Add kielbasa, simmer uncovered 5 minutes.
  5. Add shrimp and okra. Cover. Simmer 5 minutes or until shrimp is done.
  6. Discard bay leaves.
  7. Stir in file powder.
  8. Serve over rice.
