Cajun Crowder Beans Recipe

You'll be surprised how this will disappear!

Shelled crowder peas - or beans - nutritious & delicious - especially in my recipe...
Gently brown the bacon - save the pan to brown the ham...
Brown the ham - save the drippings, you'll use some in a few minutes...
Cube the ham...
Get your 'Trinity', the onion, pepper and celery, together with the crumbled bacon...
I like to include celery leaves in this dish, so be sure one stalk has a head - or trim some leaves from the core of the bunch...
I prefer pure leaf lard, but a hearty Tbs of Crisco will substitute...
as long as you also add some of the drippings from the bacon/ham element...
Strip the thyme leaves from the stalks...
Sweat the 'Trinity' & bacon in the fats...
Cajun seasoning, fine sea salt, thyme, garlic & a crumbled dried Bay leaf...
Add the veal stock...
... and the rest of the crowder peas. Bring to boil, reduce to simmer, it'll be ready when the cornbread comes out of the oven! Bon appetit!
