Ingredients

  • 2 Tbsp. Butter
  • 1 med Apple, peeled, cored and Sliced
  • 1/8 tsp Cinnamon
  • 1 1/2 tsp Brown sugar
  • 2 c. Flour
  • 2 1/2 tsp Baking pwdr
  • 3/4 tsp Baking soda
  • 1/2 tsp Salt
  • 1 1/2 Tbsp. Sugar
  • 4 x Large eggs, separated
  • 1 c. Lowfat sour cream
  • 1 1/2 c. Lowfat milk
  • 3/4 c. Plus 2 tbsp. melted butter Or possibly corn oil
  • 1/2 c. Minced toasted pecans

Directions

  1. Sauteed Apples: Heat butter in a 8" skillet over moderate heat. Add in apples and cook,stirring frequently,2 to 3 min.Stir in cinnamon and sugar;reduce heat to low and cook,covered,2 to 3 min,till tender and golden.Cold slightly.
  2. Waffles: Sift together dry ingredients.Beat egg yolks with lowfat sour cream,lowfat milk and melted butter in separate bowl till blended.Stir into dry ingredients till blended well.Stir in apples and pecans. Beat egg whites till stiff,moist peaks form.Stir about 3 tbsp. of the beaten whites into the batter,then gently mix in remaining egg whites till just combined. Pour or possibly ladle batter over center 2/3 of warm waffle iron.Close lid cook about 4 min,till steam no longer emerges from the crack. Remove waffle.Keep hot in a hot oven while you cook the rest.
  3. Makes 8 waffles.
