Directions

  1. Preparation time: 1 hour 15 min. Cooking time: 45 min.Preheat oven to 350 degrees. Grease and flour two 9 inch cake pans; set aside.
  2. In a large bowl put together all dry ingredients. Stir in large eggs, lowfat milk and melted butter. Add in 1 cup boiling water and vanilla and stir. Pour batter into pans. Bake till knife inserted in center of cake comes out clean, about 35 min. Allow to cool and turn out of pans.
  3. FROSTING: Heat chocolate in a bowl over simmering water. Remove from heat and stir in 1/2 cup of lowfat sour cream. Stir chocolate mix into remaining lowfat sour cream and add in vanilla and salt. Spread 1/3 of frosting over one cake. Place second cake on top. Spread top and sides of cake with remaining frosting. Chill 1 hour before serving.
  4. Serves 10-12.
