Ingredients

  • Dressing:
  • 1/4 tsp salt
  • 2 or 3 garlic cloves
  • 2 or 3 anchovies
  • 1/2 cup oil
  • 1/4 tsp pepper
  • dash of Tabasco sauce
  • 1/2 tsp dry mustard
  • 1 tsp vinegar
  • 1 1/2 tsp worchestershire
  • 2 egg yolks
  • juice of 1/2 lemon
  • freshly grated parmesan cheese (approx 1/4 cup)
  • bacon bits
  • croutons

Directions

  1. Crush garlic cloves and anchovies in the salt. Add oil, pepper, Tabasco, mustard, vinegar, worchestershire, egg yolks and lemon juice. Mix well with fork..
  2. Remove tips from romaine lettuce. Wash and dry leaves well. Tear coarsely into large salad bowl and toss with dressing. Sprinkle with parmesan cheese and mix. Sprinkle with bacon bits and mix. Finally, sprinkle in croutons and mix well.
  3. you can reduce to one egg yolk if desired**
  4. I've also made without anchovies and it's still a great dressing, I also use lemon juice from the jar about 1 tsp for a full batch, for a salad for two I normally 1/2 the batch. But it can be made and stored in an air tight jar in the fridge for a few days.
