Ingredients
- For Cacao Nib-Cream Cheese Swirl:
- 8 oz cream cheese, softened
- ¼ cup sugar
- 1 large egg
- 1 t vanilla
- ¼ cup cacao nibs
- scant ½ cup chopped white chocolate chunks
- For chocolate cake:
- scant ¾ cup (55 g) natural unsweetened cocoa powder
- 10 g double dark Dutched cocoa (if you do not have then use all natural cocoa, but your cake will be lighter in color)
- 1 t instant espresso
- ¾ cup warm water
- 2¼ cups (260 g) cake flour
- 1½ t baking soda
- ½ t baking powder
- ½ t fine sea salt
- ¾ cup (1½ sticks, 170 g) unsalted butter
- 1¾ cups sugar
- 3 large eggs
- 2 t vanilla
- ¾ cup sour cream

.%20Luckily%20this%20mishap%20had%20an%20easy%20fix,%20a%20thick,%20rich%20chocolate%20glaze.%20Hence%20becoming%20a%20triple%20chocolate%20affair.%20And%20you%20know%20what?%20We%20all%20agreed%20it%20was%20actually%20better%20that%20way!%20So%20triple%20it%20is!%3C/p%3E%3Cp%3EIt%20suddenly%20occurs%20to%20me%20that%20with%20the%20cacao%20nibs,%20maybe%20this%20is%20actually%20quadruply%20chocolate?%3C/p%3E%3Cp%3ENo%20such%20thing%20as%20too%20much%20chocolate%20around%20here,%20I%20tell%20ya!%20And%20because%20chocolate%20is%20the%20theme%20for%20Bundt%20Bakers%20this%20month,%20I%20have%20plenty%20of%20other%20chocolate%20bundts%20for%20you%20to%20drool%20over%20down%20below.%20This%20particular%20bundt%20started%20with%20a%20Flo%20Braker%20recipe.%20Flo%20Braker%20is%20one%20of%20those%20amazing%20bakers%20whose%20books%20get%20a%20little%20overlooked%20I%20think%20because%20they%20are%20not%20super%20sexy%20and%20full%20of%20amazing%20photos%20(although%20they%20do%20have%20some%20center%20photos).%20But%20people,%20she%20can%20bake.%20Her%20recipes%20are%20foolproof.%20The%20recipe%20that%20I%20started%20with%20here%20(I%20adapted%20just%20in%20the%20flavors)%20is%20from%20Baking%20for%20All%20Occasions%3C/p%3E%3Cp%3E.%20The%20writing%20is%20clear%20and%20simple,%20but%20never%20skips%20steps%20or%20assumes%20knowledge.%20I%20appreciate%20that%20in%20a%20baking%20book!%20I%20actually%20enjoyed%20reading%20the%20entire%20Baking%20Primer%20at%20the%20beginning%20of%20the%20book,%20start%20to%20finish.%20I%20also%20appreciate%20that%20she%20has%20volume%20and%20weight%20measurements.%3C/p%3E%3Cp%3ECacao%20Nib-Cream%20Cheese%20Swirled%20Triple%20Chocolate%20Bundt%20Cake%3C/p%3E%3Cp%3ERecipe%20type:%20Dessert%3C/p%3E%3Cp%3ECuisine:%20cakes%3C/p%3E%3Cp%3EWhisk%20together%20the%20cocoa%20powders,%20instant%20espresso%20and%20warm%20water.%20Set%20aside%20to%20cool.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F%20for%20a%20light%20colored%20pan%20or%20325%20F%20for%20a%20dark%20colored%20pan.%20Grease%20and%20flour%20a%2012%20cup%20bundt%20pan%20and%20set%20aside.%3C/p%3E%3Cp%3EBeat%20the%20cream%20cheese%20until%20creamy.%20Beat%20in%20the%20sugar.%20Mix%20in%20the%20egg%20and%20vanilla%E2%80%93do%20not%20beat%20to%20incorporate%20air,%20only%20beat%20to%20combine.%20Fold%20in%20the%20cacao%20nibs%20and%20white%20chocolate%20chunks%20and%20set%20aside.%3C/p%3E%3Cp%3ESift%20the%20cake%20flour%20into%20a%20medium%20sized%20bowl.%20Whisk%20in%20the%20baking%20soda,%20baking%20powder%20and%20salt%20until%20thoroughly%20combined.%20Set%20aside.%3C/p%3E%3Cp%3EBeat%20the%20butter%20in%20a%20stand%20mixer%20until%20creamy.%20Add%20the%20sugar%20in%20about%206%20increments,%20beating%20on%20medium%20speed%20for%20about%2030-45%20seconds%20in%20between%20each%20addition,%20and%20being%20certain%20to%20scrape%20down%20the%20sides%20and%20bottom%20of%20the%20bowl%20each%20time.%20After%20the%20last%20of%20the%20sugar%20is%20added,%20beat%20on%20medium%20high%20speed%20for%203-4%20minutes,%20until%20lightened%20in%20color%20and%20fluffy.%3C/p%3E%3Cp%3EAdd%20the%20eggs,%20one%20at%20a%20time,%20beating%20on%20medium%20speed%20after%20each%20addition%20to%20incorporate.%20Scrape%20down%20the%20sides%20and%20bottom%20of%20the%20bowl%20as%20needed.%20Beat%20in%20the%20vanilla.%3C/p%3E%3Cp%3EGently%20whisk%20the%20sour%20cream%20into%20the%20cooled%20cocoa%20mixture.%3C/p%3E%3Cp%3EAdd%20the%20flour%20mixture%20and%20cocoa-sour%20cream%20mixture,%20alternately,%20beginning%20and%20ending%20with%20the%20flour%20mixture,%20in%204%20and%203%20additions,%20respectively.%20Scrape%20down%20the%20bowl%20as%20needed.%3C/p%3E%3Cp%3EDo%20not%20overmix,%20but%20do%20finish%20mixing%20by%20hand%20to%20make%20sure%20it%20is%20all%20incorporated.%3C/p%3E%3Cp%3EPour%20half%20of%20the%20batter%20into%20the%20prepared%20bundt%20pan.%3C/p%3E%3Cp%3ELadle%20the%20cream%20cheese%20mixture%20out%20over%20the%20chocolate%20cake%20batter.%20Make%20sure%20the%20white%20chocolate%20chunks%20and%20cacao%20nibs%20are%20distributed%20fairly%20evenly.%3C/p%3E%3Cp%3EPour%20the%20remaining%20chocolate%20cake%20batter%20over%20the%20cream%20cheese%20mixture.%3C/p%3E%3Cp%3EBake%20for%2060-70%20minutes,%20until%20a%20cake%20tester%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20clean.%3C/p%3E%3Cp%3ELet%20cool%20in%20pan%20on%20rack%20for%2010%20minutes.%3C/p%3E%3Cp%3ETurn%20the%20cake%20out%20onto%20a%20parchment%20paper%20lined%20cooling%20rack.%20Let%20cool%20completely.%3C/p%3E%3Cp%3EMake%20the%20chocolate%20glaze.%3C/p%3E%3Cp%3ERemove%20the%20parchment%20paper.%20Place%20clean%20parchment%20paper%20under%20the%20cooling%20rack.%20Pour%20the%20chocolate%20glaze%20over%20the%20cake;%20repeat%20with%20any%20glaze%20that%20drips%20onto%20the%20parchment%20paper%20under%20the%20cake%20(slide%20a%20new%20sheet%20of%20parchment%20under%20the%20cake%20first).%20Let%20set%20completely%20before%20slicing.%3C/p%3E%3Cp%3E3.2.2265%3C/p%3E%3Cp%3EWe
