Well here we are in January and facing a few extra pounds due to December’s festivities. Tammie and I thought we’d trim down the calories in our January recipes for you and for ourselves! Here’s an easy, inexpensive veggie fix that I found very satisfying. It makes a great side dish or a warm, healthy snac

Directions

  1. Heat a skillet to medium-high and spray with oil.
  2. Stir fry the coleslaw mix until soft (about 5-6 minutes).
  3. Stir in the next four ingredients.
  4. Transfer to an oil sprayed cookie sheet and spread out in a thin, even layer.
  5. Sprinkle the blue cheese crumbles on top.
  6. Bake at 375 for 20 minutes.
  7. Yield: 4 cups
