Ingredients
- 1 med. yellow onion, minced
- 1 clove garlic, pressed
- 1 (16 ounce.) can diced tomatoes
- 1 (15 ounce.) can tomato sauce
- 2 (10 ounce.) Packages frzn minced spinach, thawed
- 1 (12 ounce.) box fresh mushrooms, minced (sliced)
- 2 tbsp. dry parsley flakes
- 1 teaspoon sugar
- 1 teaspoon dry basil leaves
- 18 lasagne noodles
- 1 1/2 teaspoon dry oregano leaves
- 1 c. Parmesan cheese
- 4 c. Mozzarella cheese
Directions
- Brown onion and garlic in large pot. Add in all other ingredients except cheeses and noodles. Heat to boiling and stirring frequently, simmer for 1 hour.
- Cook noodles as directed on box. Spray Pam on bottom and sides of two 9x9 inch pans. Place layer of noodles on bottom followed by sauce and the cheeses. Repeat 2 times. Top with a small amount of sauce and sprinkle with Parmesan cheese. Cook uncovered in 350 degree oven for 45 min. Let stand 15 min before cutting.
