Ingredients

  • 1 ½ cups extra large dried fava beans
  • ¼ cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 large garlic clove, minced
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground red “cayenne” pepper (optional)
  • ¾ teaspoon kosher salt, more to taste
  • Freshly ground black pepper, to taste
  • Garnish: Extra virgin olive oil and sweet paprika
  • Serve with: pita chips, homemade bread, and olives
