Buttery Brioche Recipe

Ingredients

  • ¼ cup warm whole milk
  • ¼ cup warm water
  • 1 tablespoon active dry yeast
  • 1 teaspoon granulated sugar
  • For the dough:
  • 2 ¼ cups all purpose flour
  • 3 tablespoons granulated sugar
  • 1 teaspoon kosher salt
  • 3 large eggs, beaten
  • 12 tablespoons unsalted butter, cut into 10 pieces, at room temperature
  • For baking:
  • 1 ½ tablespoons unsalted butter, melted
  • 1 large egg, beaten
  • ½ tablespoon whole milk
  • Special equipment: stand mixer with dough hook, pastry brushes, 10 (3-inch wide) fluted brioche molds or a muffin tin for 10 muffins
