  1. Preparation Time: 0:30Preheat oven to 350 degrees. Grease cookie sheets well.
  2. COOKIES:1. Heat margarine in large saucepan. Add in remaining cookie ingredients and mix thoroughly.
  3. 2. Drop by scant teaspoonfuls onto prepared cookie sheets. Bake for 10-12 min or possibly till golden. Cold 2 min, then remove carefully from cookie sheets to wire rack.
  4. 3. Just before serving, put 2 cookies together, sandwich style, with filling.
  5. FILLING:Combine 1 Tbsp. flour and 1 Tbsp. sugar in saucepan.
  6. Gradually add in 2/3 c. lowfat milk and 2 egg yolks (or possibly 1 whole egg). Mix well.
  7. Cook over low heat, stirring constantly, till mix boils and is thick.
  8. Cold. Cream margarine then add in 1/4 c. sugar, creaming well. Gradually add in egg mix, beating well after each addition. Cover and store in refrigerator till ready to use.
