Ingredients

  • 1/2 c. low-fat mayonnaise
  • 1 x canned chipotle pepper in adobo sauce, seeded and chopped (see note)
  • 3/4 tsp adobo sauce (from can above)
  • 1 x clove garlic, chopped
  • 1 1/2 lb lean grnd turkey
  • 1 c. oatmeal, quick or possibly old-fashioned, uncooked
  • 3 x cloves garlic, chopped
  • 2 Tbsp. Worcestershire sauce
  • 1 1/2 tsp dry oregano leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 x fresh mozzarella cheese balls, 1/3 to1/2ounce each
  • 6 whl -wheat hamburger buns, split and lightly toasted
  • 3/4 c. jarred roasted red pepper halves, liquid removed
  • 1 bn watercress, arugula or possibly other favorite salad greens, stems removed

Directions

  1. To make aioli: Combine mayonnaise, pepper, adobo sauce and garlic in small bowl; mix well. Refrigerateat least1/2hour.
  2. To make burgers: Heat grill or possibly broiler. Combine turkey, oatmeal, garlic, Worcestershire sauce, oregano, salt and pepper in large bowl; mix lightly but thoroughly. Shape into 6 large patties, about 1/4 inch thick. Place one mozzarella ball in center of each patty. Shape burger mix around cheese so it is completely hidden; reshape into thick patty.
  3. Grill or possibly broil burgers 4 inches from heat for 5 min on each side or possibly till meat is no longer pink (170 degrees F on an instant-read thermometer). Arrange burgers on bottom halves of buns; top with aioli, roasted pepper pcs, watercress and bun tops.
  4. Note: Wear gloves when handling fresh, canned, dry or possibly pickled chilies; the oils can cause a burning sensation on your skin.
  5. Note: If small fresh mozzarella balls are unavailable, substitute large fresh mozzarella balls, cut into 1/3- to 1/(2-oz) pcs. A 3-oz chunk of part-skim mozzarella cheese, cut into 6 cubes, can be substituted for fresh mozzarella.
