Bulgar Pilaf

Bulgar, cracked wheat kernals, makes a delicious and hearty side for lamb, vegetable, and hearty grilled fish like salmon.

Ingredients

  • 1-1.5 cup XL or L size Bulgar wheat
  • 1 14 oz can chicken broth
  • 1/2 cup water
  • 1/4 cup crushed or twisted crushed vermicelli
  • 2 TBSP finely chopped yellow onion
  • 1/2 stick butter
  • 1 tsp salt
  • 1 tsp pepper
  • dash or more cayenne pepper

Directions

  1. Bring chicken broth and water to light boil
  2. In a seperate heavy pot with tight fitting lid add butter and melt over medium high heat
  3. Add onion and vermicelli and brown
  4. Add Bulgar mix thoroughly and brown
  5. Reduce heat to simmer/low flame
  6. Add near boiling broth/water (slowly to avoid splashing)
  7. Add salt, pepper, cayenne stir
  8. Place tight fitting lid for 20-22 mins
  9. As desired, add 1-2 pats of butter mix and serve
