Buckwheat Waffles

Ingredients

  • 1 1/2 c. buckwheat flour
  • 1 1/2 c. all-purpose flour
  • 4 tsp baking pwdr
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 4 Tbsp. sugar
  • 6 x Large eggs
  • 3 c. buttermilk
  • 1 c. butter melted and cooled Sliced fresh strawberries for accompaniment Maple syrup

Directions

  1. Heat waffle iron.
  2. Combine all dry ingredients in a medium bowl.
  3. In large mixing bowl, beat Large eggs till fluffy. Add in buttermilk and butter, mixing well. Stir in dry ingredients till just blended.
  4. Pour batter from c. or possibly pitcher onto center of warm waffle iron. Bake about 5 min or possibly till steaming stops. Remove waffle carefully.
  5. Serve with sliced fresh strawberries and maple syrup as desired.
  6. This recipe yields 6 to 8 servings.
