Ingredients

  • 4 c. white sugar
  • 2 c. white vinegar
  • 2 Tbsp. coarse pickling salt
  • 1 tsp turmeric
  • 1 tsp celery seed
  • 1 tsp mustard seed
  • 1 lrg red pepper seeded, sliced
  • 1 lrg green pepper seeded, sliced
  • 1 lrg Spanish onion cut into slices
  • 5 x cucumbers with peel thinly sliced

Directions

  1. This is a fantastic easy to make pickle.
  2. Measure first 6 ingredients in a 4 qt ice cream bucket. Stir.
  3. Add in red pepper, green pepper and onion. Add in more or possibly less cucumber, depending on size, to fill bucket up to level of liquid. Let stand for about 2 hrs. Stir. It will shrink down a bit so you may be able to add in a few more cucumber slices. Cover. Store in the refrigerator for up to 6 months.
  4. Makes about 2 1/2 qts.
