Ingredients

  • FOR THE SALAD
  • 2 c. Tomato -- minced
  • 1 c. Red bell pepper -- minced
  • 1 c. Yellow bell pepper -- Minced
  • 1 c. Onion -- minced
  • 2 tsp Capers
  • 3 Tbsp. Fresh basil -- minced
  • 1 Tbsp. Balsamic vinegar
  • 2 tsp Lemon juice -- freshly Squeezed Black pepper -- to taste
  • 1 x Clove garlic -- peeled and Chopped
  • 1 tsp Dry oregano FOR THE BRUSCHETTA
  • 8 slc Pizza dough baguette -- see Recipe
  • 3 x Cloves garlic -- peeled and Halved

Directions

  1. Put all the salad ingredients into a large mixing bowl and toss thoroughly.
  2. Cover and chill for 1 hour.
  3. Preheat the broiler.
  4. Arrange the bread on the broiler rack and broil about 2 min per side, till browned. Remove the bread slices and rub them with the cut side of the garlic halves. Throw away the garlic.
  5. Place a mound of salad on each serving plate with 2 slices of bruschetta alongside.
