Ingredients

  • 1 1/2 c. firmly packed light brown sugar
  • 1/4 c. lowfat milk (or possibly half & half -liquid non dairy creamer is good too)
  • 3 T butter
  • 1 teaspoon vanilla

Directions

  1. Place first 3 ingredients in heavy saucepan. Mix till sugar is moistened. Bring to full boil, stirring occasionally. Boil exactly 3 min (soft ball stage). Remove from heat and add in vanilla. Place pan in cool water in sink and beat contents till cool. This frosting thickens quickly once cool. If it gets too thick, add in a small amount of lowfat milk and beat till spreadable. Frosts 9 inch cake.
