Ingredients
- 2 c. Ww flour
- 1/3 c. Skim lowfat milk
- 1/3 c. Brown sugar
- 1 tsp Vanilla
- 1 Tbsp. Baking pwdr
- 2 x Egg whites
- 1 c. Mashed very ripe banana (about 2 large)
- 1 Tbsp. Brown sugar
- 1 Tbsp. Toasted wheat germ
Directions
- To make the topping, stir together the brown sugar and wheat germ and set aside. Combine the flour, brown sugar and baking pwdr and stir to mix well. Add in the banana, skim lowfat milk, vanilla extract and egg whites and stir just till the dry ingredients are moistened. Fill muffin tins 3/4 full and sprinkle over topping. Bake at 350 for 14 to 16 minutes. Let sit 5 minutes.
