Ingredients

  • 6 lrg sweet potatoes skin on, cut into 2-inch cubes
  • 2 Tbsp. vegetable oil Salt and freshly grnd pepper
  • 4 Tbsp. unsalted butter
  • 1 c. brown sugar
  • 1 Tbsp. lemon rind finely grated
  • 2 Tbsp. lemon juice

Directions

  1. 1. Preheat oven to 375 F. Toss potatoes with vegetable oil and season lightly with salt and pepper to taste. Bake for 25 min.
  2. 2. While potatoes are baking, place the butter, sugar, zest and juice in medium saucepan and heat over medium heat. Remove potatoes from the oven and toss with the melted sugar mix. Return to oven and continue cooking for 10 min or possibly till potatoes are cooked through and glazed.
