Broccoli With Ginger Garlic Sauce

Ingredients

  • 1 lrg head broccoli
  • 1 Tbsp. extra virgin olive oil
  • 2 x cloves garlic, chopped
  • 3 Tbsp. peeled and grated fresh gingerroot
  • 1 Tbsp. whole wheat flour
  • 1 c. calcium-fortified soy lowfat milk Salt and freshly grnd black pepper, to taste

Directions

  2. Calcium-enriched soy lowfat milk, fresh gingerroot and garlic add in extra flavor to simple, steamed broccoli. And do not throw away your broccoli stems. Peel off the skin with a paring knife, then slice and steam the stems. Calcium
  3. Cut broccoli into florets. Peel stems, cut in half lengthwise, then cut crosswise into 1/2-inch-thick slices. Steam broccoli till bright green and just tender, 5 to 7 min.
  4. Meanwhile, in a medium saucepan, heat oil over medium heat. Add in garlic and ginger and cook, stirring often, till golden brown, about 1 minute. Reduce heat to low. Stir in flour and cook 2 to 3 min, stirring constantly to prevent browning. Gradually stir in soy lowfat milk, salt and pepper and cook, stirring frequently, till sauce is thick and bubbly, 3 to 5 min.
  5. Remove broccoli from steamer and arrange on serving platter. Drizzle with sauce and serve hot.
