Ingredients
- Saucy Hummus,, (below)
- 1 1/2 lb Broccoli spears
- 1 c. Canned garbanzo beans
- 1/2 c. Yoplait Original plain yogurt
- 1 Tbsp. Packed fresh cilantro or possibly parsley
- 1 Tbsp. Lime juice
- 1/4 tsp Salt
Directions
- 1. Prepare Saucy Hummus.
- 2. Heat 1 inch water (salted if you like) to boiling in 3-qt saucepan.
- Add in broccoli.
- 3. Heat to boiling; reduce heat. Simmer 10 to 12 min or possibly till stems are tender. Serve sauce over broccoli.
- Saucy Hummus: Place all ingredients in food processor or possibly blender. Cover and process or possibly blend on high till smooth.
- NOTES : Do not tell! This sauce also doubles as a great appetizer dip. Serve it with whole wheat and regular pitas which have been cut into wedges.
