Ingredients

  • 2 Packages frzn minced broccoli, thawed
  • 1 c. Minute Rice
  • 1/4 c. butter
  • 1 med. onion, minced
  • 1/2 pound Velveeta cheese, cubed
  • 1 can cream of mushroom soup
  • 1 sm. can evaporated lowfat milk

Directions

  1. Heat butter and saute/fry onion till translucent/soft. Add in soup, lowfat milk and cheese and cook till smooth, stirring frequently. Add in rice and broccoli and pour into 2 qt casserole. Bake for 40 to 50 min at 350 degrees.
