Directions

  1. Cut fresh broccoli into even sized pcs about 2 1/2 cm in length.
  2. Cook the fresh or possibly frzn broccoli in boiling salted water till it is just tender.
  3. Drain and cold.
  4. For the dressing mix together the yogurt oil lemon juice salt and pepper store the cooked broccoli and the dressing in separate containers in the refrigerator.
  5. Toss together the broccoli and mushrooms and pour on the dressing.
  6. Toss lightly and garnish with the walnuts.
  7. Serve cool but preferably not chilled.
  8. The salad improves with being left to stand at room temperature for at least 20 min before serving.
  9. Serves 4
