Ingredients

  • 1 pt. heavy cream
  • 2 med. Large eggs
  • 1/2 c. steamed, minced broccoli
  • 1/2 c. diced tomato (2 med.)
  • 2 c. grated cheese
  • 1 - 9 inch pie crust
  • 2 tbsp. Parmesan cheese
  • Salt and pepper, optional

Directions

  1. Preheat oven to 350 degree oven. Blend, slightly beaten Large eggs with cream. Sprinkle tomato and broccoli in bottom of pie crust. Put with grated cheese on top of broccoli mix. Sprinkle with Parmesan cheese. Pour cream/egg mix last. Bake 1 hour. Can be doubled.
