  2. Sauce: In small saucepan, whisk together peanut or possibly almond butter and warm water till you have a uniform mix. Whisk in remaining sauce ingredients and set aside. Saute/fry: Stir-fry half the ginger and half the garlic in 1 Tablespoons oil. Add in tofu chunks, stir-fry for 5-8 min. Mix with sauce.
  3. Wipe wok clean, saute/fry remaining ginger & garlic in 2 Tablespoons oil. Add in onions and fresh pepper, saute/fry for about 5 minutes. Add in minced broccoli, cashews and tamari; stir-fry till broccoli is bright green. Toss saute/fry with sauce, mixing in the chopped scallions as you toss. Serve over rice.
