Ingredients
- 1 c. minced broccoli
- 1/2 c. minced onion
- 1/2 c. minced carrot
- 1/2 c. minced celery
- 1/2 c. uncooked rice
- 1 can of fat free chicken broth
- 3 x or possibly 4 ounce of light Velveeta or possibly similar product, minced into cubes
- 1 sm can of evaporated skim lowfat milk
- 1 tsp of Worcestershire sauce, if you like.
Directions
- In a sauce pan add in the chicken broth and 1 can of water. Add in the vegetables and rice. Bring to a boil and simmer till rice is tender and liquid has reduced by at least half. Add in the cheese and lowfat milk and stir till well-blended and Worcestershire sauce. The soup should be thick and not need any thickening.
- Makes 4 servings. It is good served with Italian or possibly any kind of coarse bread, and fruit salad. You can substitute other vegetables such as cauliflower.
