Broccoli and Cheese Pasta Salad

Nice salad with raw veggies.

Ingredients

  • 1 lb. pasta, such as rotini or medium seashells
  • 2/3 - 1 cup mayonnaise
  • 4 oz. cheese, cut in small cubes
  • 2 tbs. red wine vinegar
  • 1/2 cup chopped broccoli florets, washed and chopped
  • 1 stalk celery diced
  • 1/2 red bell pepper, diced
  • 2 scallions, diced
  • 1 T fresh mixed herbs, or 1 tsp. dried Italian herbs
  • 1/2 T chopped black or Manzanilla olives
  • 1 tsp. fresh parsley, chopped, or 1/2 tsp dried
  • 1/8 tsp. garlic powder
  • salt and pepper to taste
  • optional: Sliced cherry tomatoes

Directions

  1. Cook, drain and cool pasta, toss with vinegar
  2. Chop or dice veggies smalled than the size of the pasta.In a bowl, combine all ingredients, refrigerate several hours before serving.
