Ingredients

  • about 500 g broad beans
  • 50 g bacon, diced
  • 1 small onion, chopped
  • 150 ml arborio or carnaroli rice
  • 100 ml white wine or Noilly Prat
  • about 400 ml chicken or vegetable stock
  • 50 g butter
  • 2 tbs olive oil
  • 40 g Gruyère or Parmesan cheese, grated
  • salt and pepper
