Brie With Sun Dried Tomatoes Belden

Ingredients

  • 1 pound Brie, chilled
  • 2 tbsp. chopped fresh parsley leaves
  • 2 tbsp. freshly grated Parmesan
  • 4 sun-dry tomatoes, packed in oil, liquid removed, reserving 1 tbsp. of the oil and chopped
  • 6 cloves garlic, chopped and mashed to a paste
  • 1 teaspoon dry basil, crumbled

Directions

  1. Remove the rind from Brie and place on a serving plate. In a small bowl combine parsley, Parmesan, tomatoes, garlic and basil. Add in the reserved oil and combine the mix well. Spread mix over the Brie and let stand for 1 hour before serving. Serve with crackers.
  2. Serves 6-8.
