Ingredients

  • 1 tablespoon olive oil
  • 1 – 14 ounce package frozen bell pepper and onion mix
  • 6 eggs
  • 1 1/2 cups egg whites
  • 1 1/2 cups sliced California Ripe Olives
  • salt and pepper to taste
  • For serving:
  • Corn tortillas – 2 to 4 per person
  • Cheese – shredded Mexican blend cheese and/or queso fresco
  • Seasonings – your favorite salsa and hot sauce
  • Avocado slices
  • Fresh lemon or lime wedges
  • Sliced California Ripe Olives
  • Optional: cilantro, raw onions (diced), fresh tomatoes (diced), or sour cream
