Breakfast Sweet Potato Pie

Ingredients

  • 5 Large eggs
  • 1 c. grated Georgia sweet potato
  • 1/2 c. cottage cheese
  • 1 c. shredded Swiss cheese
  • 1 green onion, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoonpepper
  • 4 drops warm sauce
  • Vegetable cooking spray
  • 1/2 c. diced cooked ham
  • Paprika

Directions

  1. Beat Large eggs; add in potatoes and next 6 ingredients. Pour into a 10 inch pie pan coated with vegetable spray. Sprinkle with ham and paprika. Cover and chill at least 8 hrs. Place cool pie pan, uncovered, in cool oven. Bake at 350 degrees for 35 min or possibly till potatoes are tender and Large eggs done. Yields 6 to 8 servings.
