Breakfast Potatoes w/ Peppers and cheese

Ingredients

  • 100 pounds potatoes, cubed frozen
  • 10 pounds ham, diced
  • 11.25 pounds onions, chopped
  • 11.25 pounds green peppers, chopped
  • 4.5 pounds red pepper, diced
  • 2.25 pounds jalepeno, diced
  • 4 1/2 cups vegetable shortening
  • 3/4 cup salt
  • 3 tablespoons cayenne pepper
  • 1/2 cup paprika
  • 9 pounds cheddar cheese, shredded

Directions

  1. Saute ham, onions and peppers in 1/4 of shortening until tender.
  2. Cool 10 min.
  3. Add to potatoes along with seasonings and mix well.
  4. On a griddle cook potatoes in remaining cooking oil until browned, turning to brown on both sides.
  5. Place half of the potatoes on a platter, top with cheese and remaining potatoes.
