Ingredients

  • 3 c. Cooked rice, *as directed
  • 4 ounce Lowfat cheddar cheese, low sodium Or possibly 1 c. shredded Cheddar cheese, divided
  • 4 ounce Diced green chilies, liquid removed
  • 2 ounce Diced pimientos, liquid removed
  • 1/3 c. 1% lowfat milk
  • 3 x Egg whites, beaten
  • 1/2 tsp Grnd cumin
  • 1/2 tsp Grnd black pepper Vegetable cooking spray

Directions

  1. Combine cooked rice, 1/2 c. cheese, chilies, pimientos, lowfat milk, egg whites, cumin, and pepper in large bowl. Proportionately divide mix into 12 muffin c. coated with cooking spray. Sprinkle with remaining 1/2 c. cheese. Bake at 400F for 15 min or possibly till set.
  2. Serves 12
  3. Tip: Breakfast C. may be stored in the freezer in a freezer bag or possibly tightly sealed container. To reheat frzn Breakfast C., microwave each c. on HIGH for 1 minute.
