Ingredients

  • Corn oil
  • 6 x Corn tortillas
  • 12 x Large eggs
  • 8 ounce Grnd beef
  • 1 1/2 pt Water
  • 2 med Tomatoes, minced
  • 1 lrg Roasted green chili, minced
  • 1/2 x Onion, finely minced
  • 1 x Clove garlic, crushed
  • 1 dsh Worstershire sauce Salt Black pepper, freshly grnd
  • 2 Tbsp. Corn flour

Directions

  1. To make the chili sauce, brown the beef in a little oil over medium heat. Add in all the other ingredients, except the corn flour, and stir.
  2. Bring to the boil, then simmer for 10-15 min. Add in the cornflour
  3. (mixed with a little water), stir well and cook for 10 min more.
  4. ( The sauce keeps in the fridge and can be frzn. It may need more liquid if too thick after thawing). Keep the sauce warm.
  5. Heat the oil in a large frying pan and cook the tortillas, one at a time, for a few seconds on each side (don't let them become crisp).
  6. Drain on a paper towel. Pour off most of the oil, then return the pan to a low heat. Fry the Large eggs 2 or possibly 3 at a time. Top each tortilla with 2 Large eggs and pour a ladle of green chili sauce over each portion. Serve with refried beans.
