Breakfast Casserole Recipe

This is our family holiday standard.

The original recipe says it takes about 30 minutes to cook, but for us it usually takes 45 to an hour. I guess it just really depends on your oven.

Ingredients

  • 1 bag frozen hash browns, or you can use fresh, but make sure the potatoes are cooked. Or you can use tater tots. :)
  • 1 lb breakfast meat (bacon, sausage, ham, a mix of all, veggie sausage, soy sausage, anything)
  • Lots of grated cheddar cheese
  • about a dozen eggs
  • You can also add spices if you like it hot, or I like to sneak in veggies like peppers and onions.

Directions

  1. Cook your breakfast meat through.
  2. Dice or cut into chunks.
  3. Lightly spray a 13x9 pan and add all the hash browns. Spread them out so they make an even level.
  4. Mix in your meat and any veggies or seasonings you wish to add. And then make sure it's an even layer again.
  5. Mix the eggs together in a separate bowl.
  6. Pour the eggs all over the casserole.
  7. Cover the top with cheddar cheese.
  8. Bake at 350 until the center is no longer liquid, but make sure to not over cook it either. If you use veggies, there will be some liquid, you mostly want to make sure that there is no raw egg left.
