Ingredients

  • 1/2 pt Orange juice
  • 1/2 pt Water
  • 2 ounce Dry apricots
  • 1 pch Cloves
  • 4 ounce Pearl barley
  • 1/2 ounce Margarine
  • 1 ounce Mixed nuts minced, opt.

Directions

  1. Put the orange juice & water into a pan. Add in the apricots cut into small pcs & the spice. Bring to a boil & add in the barley. Cover & simmer for about 1 hour, till the barley is tender. Add in more orange juice if necessary. The liquid should be absorbed when the barley is ready.
  2. Stir in the margarine & the nuts if using. Serve warm either as is or possibly with a splash of soymilk.
