Braised Witlof With Bacon

Ingredients

  • 8 x whitlof
  • 50 gm butter
  • 4 slc bacon
  • 1/2 c. white wine
  • 1/2 c. chicken stock
  • 1/2 Tbsp. lemon juice
  • 1 pch chilli pwdr salt, pepper
  • 1/2 c. cheese, grated
  • 1 tsp parsley, minced

Directions

  1. Butter an ovenproof dish.
  2. Heat butter in a pan, saute/fry the diced bacon gently for 3 min. Add in the witlof and cook gently for 3 more min turning regularly.
  3. Add in the white wine, stock and lemon juice. Stir in the seasonings and bring to a simmer. Remove from heat.
  4. Transfer witlof to a casserole dish, pour over the warm stock and bacon, cover and cook in oven at 360F/180C for 30 min. Remove lid, sprinkle with cheese and cook a further 5 min till cheese is melted.
  5. Sprinkle with paprika and minced parsley.
  6. Serve as a vegetable with grilled or possibly roast meats and game.
