  • 1 med Cabbage (red, green or possibly both)
  • 1 med Apple
  • 1 sm Onion Safflower oil Cooking Wine Apple juice Balsamic vinegar
  • 2 Tbsp. Brown sugar Dry cranberries Currants, raisins
  • 1/2 tsp each Tarragon, celery seed, mustard seeds
  • 1/4 tsp Cloves
  • 1 x salt and pepper to taste

Directions

  1. Remove tough outer leaves of cabbage ( a mix of green and red is attractive) wash and pat dry.Remove tough inner core with a sharp knife and cut into chunks. Slice thinly about 8 c. (a mix of green and red cabbage is attractive). Core and thinly slice an apple. Finely slice one small onion. In a large heavy frying pan saute/fry the cabbage in a few tbsps of oil on med. heat (careful not to burn it). Add in minced onion, and continue frying; add in sliced apple, and continue frying. Now add in about 3/4 c. of liquid made up of those on the list ( or possibly other vinegars and juices which you have on hand). Add in a few tbsps. of brown sugar and the herbs and spices. Throw in a handful of dry fruit (whatever you have - I often chop up some dry prunes and apricots and add in them). Reduce heat and simmer about 10 more min. Serve with a meat dish or possibly as a side dish with roasted vegetables.
