Braised Pork-Knuckles (Paksiw na Pata) Recipe

A sweet and sour recipe for pork pata (knuckles) that most Filipino enjoy. Very easy to cook and very good to eat!

Directions

  1. Place pork leg and add water (enough to cover the meat) in a large pot. Before it comes to a boil, scum will rise on top of the water. Skim off those scum until water boils and no more scum rise on top.
  2. Pour in the soy sauce and vinegar.
  3. Wait for it to boil then add peppercorn, bay leaf and crushed garlic.
  4. Simmer over low heat for at least 1 hour or until pata becomes tender. (Use a pressure cooker if you need to)
  5. When meat is tender, add the banana blossom and lechon sauce.
  6. Stir and season with salt or fish sauce to taste. Pour in a little oil too.
  7. Simmer for a minute and serve with steamed rice.
