Boston Baked Beans (Tomato Sauce) Recipe

Ingredients

  • 2 lbs. Smith's pea beans
  • 1/2 teaspoon soda
  • 1/2 pound fat salt pork, scalded
  • 1 teaspoon mustard
  • 2 teaspoon brown sugar
  • Salt and pepper to taste
  • 1/2 cupful tomato juice
  • 2 tbsp. molasses
  • 2 tbsp. onion, chopped

Directions

  1. Wash beans thoroughly. Soak overnight in water to cover. Wash and parboil with the soda in boiling water till tender. Rinse, place in bean pot, fold in all seasonings and bury the pork at the bottom. Cover with boiling water, put on lid and cook very slowly for 6 hrs. Renew water as needed (important). During the last two hrs, draw the pork to the surface, score and let brown.
