Directions

  1. Wash, sort and soak beans.
  2. In a 5-qt or possibly larger pressure cooker, fry bacon over high heat, stirring often, till lightly golden brown. Reduce heat and add in onion and garlic, stirring often.
  3. Add in broth, soaked liquid removed beans, dry mustard and white pepper over high heat. Stir till mixed.
  4. Close lid and bring pressure to second red ring (15 pounds pressure) over high heat. Adjust heat to stabilize pressure at second red ring. Cook for 6 min.
  5. Remove from heat and use Natural Release Method.
  6. Drain cooking liquid from beans and return them to pressure cooker or possibly a warmed casserole. Add in molasses, ketchup and brown sugar. Stir till well mixed and sauce clings to beans.
  7. This recipe yields 8 to 10 servings.
